YeeHaw! Pass the Cowboy Cookies!
I love cookies. One of my favorite foods, and these are the best! A perfect mix of chewy, ooey, gooey goodness. Seriously, I think the dough is what puts them head and shoulders above the rest. It is so light and fluffy and cinnamon-y! I stumbled across this recipe a few years ago and made them for my co-workers. Boy, did they go fast. I never got so many compliments on cookies! So then I decided to make them for more things, and they were still a hit! Everywhere these cookies went, they were the star. Not even kidding. I have come to the point where people request the cookies frequently. Like supply and demand don’t match up! It’s killing me! I now have to double or triple the recipe and freeze the cookie dough so I don’t have to slave away in the kitchen more than necessary.
Quick disclaimer: these cookies contain coconut, gluten, cinnamon, and possibly pecans. I once made these for a bunch of people, and someone had mentioned how they were excited to try a cookie since they had heard all the rave reviews (seriously, they are that good). She grabbed one and took a big bite out of it. Within seconds, she says, “Does this have coconut in it?” I reply, “Yes.” (thinking it was a good thing- who doesn’t like some coconut). “Oh, my lips are all tingly, and my tongue too!” “Are you allergic?” (Obvious deduction on my side). “Yeah, but it will be okay. I just won’t eat anymore. They are good though.” Umm, yeah, I almost kill you, and you still feel the need to compliment me. Pretty crazy stuff. Now, my paranoid self labels the cookies with the dangerous ingredients and makes sure to verbalize them to anyone who wants to try them. I have also made a small part without the coconut, and they turned out fine for those who are allergic.
On to the best part- the cookies!
3 cups flour
1 Tbsp baking powder
1 Tbsp baking soda
1 Tbsp cinnamon
1 tsp salt
1 ½ cups butter
1 ½ cups sugar
1 ½ cups brown sugar
1 Tbsp vanilla
3 cups semisweet chocolate chips
3 cups old fashioned oats
2 cups sweetened coconut flakes
2 cups pecans (optional)- I have personally never used these because of the allergy thing
Preheat oven to 350
Mix flour, baking powder, baking soda, cinnamon, and salt together
Beat softened butter on medium speed until smooth. Add sugar and brown sugar and beat for another 2 minutes.
Add eggs one at a time into the sugar/butter mixture. Beat well after each addition. Mix in the vanilla.
Add the flour mix to the wet mix. Blend until combined.
Add the chocolate chips, oats, coconut, and pecans and stir well.
Place about 1 inch scoops (tablespoon size) onto an ungreased baking sheet and bake at 350 for 10-12 minutes.
After they cool, enjoy!
